3/4 c. Unsalted Butter
1/2 c. Granulated Sugar
1/2 c. Packed Brown Sugar
Cream together until smooth.
1 large egg
1 tsp. Vanilla
Add each and blend.
1 1/2 c. Unbleached all purpose flour
1/4 c. Cake flour
1 tsp. Soda
1/2 tsp. Salt
1/2 tsp. Cinnamon
Sift together and add to the blended mix above.
1/2 c. Sweetened Dried Cranberries- roughly chop them. (Trader Joe’s)
1/2 c. Rolled Oats (Toast for a nuttier taste)
1/2 c. Pecan pieces – Toasted (Trader Joe’s)
1/2 c. Sweetened coconut flakes
1/2 package white chocolate chips (about 3.5 oz.)
1/2 c. Almond pieces, dry roasted (Fred Meyer in Bulk)
1/2 c. Slivered almond pieces (Trader Joe’s)
Depending on what you have, mix and match these ingredients. Blend all these together, then add to the above mix.
Refrigerate until well chilled
350 Degree oven
Drop by teaspoon fulls on cookie sheet with parchment paper. Allow room for cookies to expand.
Bake for 7 minutes, turn the pan. Then, check every 1-2 minutes. They are touchy. They are done when the tops have lost their white sheen and when you touch them, they are barely “set”. They will firm up and darken after being removed from the oven. You will figure it out!
